Chemical and Organoleptic Analyses – Olive Oil Harvest 2025/2026
We would like to share with you an update regarding the organoleptic and chemical analyses carried out on our oils, referring to the latest harvest.
The results reflect a challenging season which, as you know, was significantly affected by a major olive fruit fly infestation.
This environmental factor has inevitably impacted certain analytical parameters, particularly leading—compared to more favorable years—to higher acidity levels and a reduction in total polyphenols.
From an analytical standpoint, while reflecting the critical aspects of a difficult agricultural season—common across much of the olive oil sector—the oils show:
- chemical parameters compliant with the reference category,
- an organoleptic profile free from defects, with medium fruitiness,
- moderate oxidative stability, in line with the production context of the season
